Another important event organized by the Association, in collaboration with the Village of Farra di Soligo as part of the Calici di Stelle event, is entitled Dalla Cima al Fondo. This takes place around the atmospheric church of San Gallo situated 360 metres above sea level. The event aims to highlight the differences between the traditional wine-producing method, with refermentation in the bottle, and the more widespread Charmat method, with refermentation in autoclaves. The two techniques symbolise, respectively, the contrast between the ancient and the modern in our area.
